I originally saw the idea on Pinterest for pizza quesadillas and thought it would be a fun dinner to make for G one evening.
When DJ was in Vegas, and the girls and I were home alone, I thought i'd make it for G, but she refused, when I told her my dinner idea. I'm pretty sure she settled for pb&j instead!
DJ's been busy again with football camps, so as I was coming up with dinner for the girls and I, I remembered the pizza quesadilla idea, and thought, perfect. I just won't tell G this time!
Ingredients:
Tortilla's
Pizza Sauce,
Mozerella Cheese
Pepperoni
Other pizza toppings
How to:
Spray cooking oil on a warmed skillet. Place one quesadilla down, and spread pizza sauce on the top. Layer your ingredients, and cover with a second quesadilla. Allow, the bottom side to brown, and the cheese to start to melt, flip, and let the cheese finish melting. Cut & serve.
This was really easy, and honestly, i'm not sure why it took Pinterest for me to figure out to add pepperoni to a quesadilla. You could also give pizza sauce on the side for dipping, and leave it off of your quesadilla when cooking.
